Start your day the heart-friendly way
Start the day with this delicious muesli and know your heart will be healthier for it. Oats are a top cholesterol buster and a bowl of this packs a serious nutritional punch when joined with the other super good-for-you ingredients. Nuts and seeds go stale alarmingly fast, so make sure you buy the freshest ones possible, as you can really taste the difference. Feel free to play around, substituting almonds, dried apricots, hazelnuts, dried figs – anything you like.
Heart-Smart Muesli
1½ cups rolled oats
125g lecithin granules
100g LSA mix
100g soy and linseed straws
100g shredded coconut
100g chopped brazil nuts
100g chopped almonds
100g sunflower kernels
100g pepitas
100g sultanas
50g dried cranberries
50g sesame seeds
The easiest way to make this is to use electric scales. Weigh each ingredient into the bowl, bringing the tally back to zero after each addition. When all the ingredients are combined, toss together evenly before decanting into a tightly sealed storage container. Store in the freezer at all times. Serve with reduced fat milk or yoghurt of choice and sliced fruit. Makes 8 cups.
Dietary tips
Portion control
In the mornings, when you’re racing to get out the door, keep a half-cup measuring cup in the container with the muesli. So often it is not what we eat, but rather how much, that matters. This way, without having to think, you reach in and instantly have an appropriate serving, no weighing required.
